The story

Schranners Waldhorn, Tübingen: Michelin-Recommended Classic Cuisine

In the Bebenhausen district of Tübingen, Schranners Waldhorn has established itself as a place for thoughtful, seasonal cooking. The family-run restaurant, led by chef Max Schranner and his wife Marie-Luise, earned a place in the Michelin guide with its Recommended distinction for 2026, a recognition of the kitchen’s consistent quality and refined approach.

A Chef Rooted in Tradition

Max Schranner trained at renowned establishments such as the Hotel Bareiss in Baiersbronn and the Gasthaus zum Gupf in Rehetobel, experiences that shaped his cooking philosophy. His style blends classic techniques with seasonal influences, resulting in dishes that are both sophisticated and approachable. Marie-Luise Schranner oversees the front of house, ensuring a warm and professional service.

Atmosphere and Setting

The restaurant comprises two elegant dining rooms: the Waldhorn-Stube, which seats up to 40 guests, and the more intimate Schloss-Stube with 25 seats. In warmer months, the terrace overlooking the Seebach offers a tranquil setting for lunch or dinner. The décor is stylish yet comfortable, reflecting the restaurant’s commitment to a welcoming, unpretentious atmosphere.

Seasonal Classic Cuisine

The kitchen offers a lunch menu from Wednesday to Sunday, with a choice of two or three courses. Recent examples include a Münchner Schnitzel with pommes bâtons and market vegetables, or pan-seared fish with couscous and carrot variations. In the evening, the à la carte menu presents a wider selection, with dishes such as beef tartare with quail egg and sesame pastry, or roasted onion beef with spätzle. Themed dinner events, like the French classics evening featuring frog legs and a traditional “Oreiller de la Belle Aurore” pastry, showcase the kitchen’s versatility. Vegetarian options are available upon request, and the seasonal menu changes regularly to highlight the best of local produce.

Marie-Luise and Max Schranner, along with their team, emphasise hospitality and sustainability, ensuring that every guest feels at home. Whether for a leisurely lunch or a special evening, Schranners Waldhorn offers a genuine taste of classic cuisine with a seasonal twist.
