The story
At Untere Apotheke, European cuisine is reimagined with a spirit of adventure. The restaurant, located directly on the historic Marktplatz in Waiblingen, serves dishes that reinterpret classics with creativity and care. Whether you choose à la carte or a multi-course menu, each plate is built on a foundation of regional ingredients, selected with passion and precision.
The kitchen’s philosophy is rooted in a genuine farm-to-table approach. Since spring 2024, the team has cultivated its own garden on the Schmidener Feld, in collaboration with the Berufsbildungswerk Waiblingen. This project supplies the restaurant with fresh, seasonal vegetables and herbs, minimizing the distance from field to fork. The garden also reflects a commitment to social responsibility, supporting the vocational training of young people with special needs.
The restaurant offers a warm, welcoming space for both lunch and dinner. On warm days, guests can enjoy outdoor seating on the terrace or the Marktplatz. A private room is available for events, accommodating up to 45 guests. The interior is modern and relaxed, reflecting the contemporary approach to European cuisine.
Untere Apotheke’s dedication to quality and sustainability has earned it a Michelin Recommended award for 2026. The team, led by Pablo Fernandez and Max Rebhorn, focuses on minimizing waste by thoughtfully repurposing elements from appetizers into main courses. This modern cuisine is not just about flavor—it’s about responsibility, from the garden to the table.
