A Young Team, a Single Menu

In Wernigerode, the restaurant Zeitwerk is the domain of chef Robin Pietsch and his team. Pietsch, who trained as both a cook and a pastry chef, works alongside kitchen chef Fabian Hörhold and restaurant manager Annika Wolf. Together they serve a single, seasonal tasting menu per evening. The approach is deliberate: the meal unfolds over several hours, and the kitchen asks guests to arrive at 7 p.m. for a 7:15 p.m. start. The restaurant seats a maximum of twenty people, which allows for an intimate, focused evening.

The Michelin Difference

Zeitwerk holds a Michelin star, and the inspectors noted: “One menu – many small courses. Creative, sophisticated, and pleasantly reduced – it brings joy and stays in memory.” The recognition is well-deserved. The kitchen works with carefully selected products, draws on the Harz region, and interprets them in a modern, sometimes playful way. The result is a form of modern cuisine that feels both grounded and adventurous.

Atmosphere and Service

The interior is minimalist and contemporary, with a large glass window offering a direct view into the kitchen. The atmosphere is relaxed and family-like, and the service is described as skilled and charmingly casual. It is not a place for rushed dinners; the team views a restaurant visit as akin to a theatre performance – special, and worth taking time for.

The Menu: New and Old from the Harz

The menu changes with the seasons. A recent version, titled “Neues & Altes aus dem Harz,” began with a series of small starters: a fritter, Harz cheese, and a beef roulade. It continued with eel, pike with spinach and caviar, quail with savoy cabbage, sturgeon with peas and asparagus, a Soljanka course, lamb with beans, and finished with carrot with brandy and hazelnut, and apple with buckwheat. A coffee or tea degustation with sweets and lingonberry cake rounds out the evening.

There is also a signature dish called “Tote Oma” – a cheeky name that guests can order as an upgrade. For those who wish, caviar additions are available.

What to Know

The menu is priced at €150 (Wednesday/Thursday) and €170 (Friday/Saturday and public holidays). A wine pairing starts at €75, and a non-alcoholic pairing at €60. Vegetarian and pescatarian adaptations are possible with advance notice, but the kitchen cannot accommodate vegan requests or individual allergy adjustments. There is no à la carte.

Zeitwerk is open Wednesday through Saturday, with Sunday to Tuesday as rest days. Reservations are essential and binding, with a 48-hour cancellation policy. The restaurant is located at Breite Straße 53a, in the heart of Wernigerode.
