A Historic Setting, Reimagined

In the heart of Winnenden, the Altes Rathaus (Old Town Hall) has found a second life. Signed over to the What the Food team in November 2022, the building underwent a five-month renovation that brought its historic bones into the present. The result is a refined, welcoming space that seats up to twelve guests in the main dining room, with an additional event room, “47,” for larger parties. Outdoor seating is available during warmer months—a quiet spot to enjoy the evening air.

The Chef and His Cuisine

At the stove is Patrick Schubert, a young chef whose travels—especially through Japan—have left a clear imprint on his cooking. His menu takes traditional and classic European dishes and reworks them with modern precision, fresh, high-quality ingredients, and subtle Asian influences. The kitchen is driven by a passion for creativity and a commitment to farm-to-table sourcing, reflected in the changing seasonal offerings. Whether it’s a reinterpretation of a Swabian classic or a completely new composition, each plate is built on respect for the product.

What the Michelin Inspectors Found

The Michelin inspectors have taken note, awarding the restaurant a spot in their 2026 Recommended selection—a mark of consistent, skillful cooking and a genuinely pleasant dining experience. The recognition fits naturally with the team’s philosophy: an obsession with detail, a warm service style, and an environment that feels both elevated and unpretentious.

More Than a Restaurant

What the Food also operates a food truck, offering street food like pulled pork, beef, and falafel as well as creative soups. But the restaurant remains the core of the project—a place where the team’s passion for gastronomy meets the charm of a historic town hall. It’s a young, ambitious kitchen doing honest, inspired work.
