The story
The Landgasthaus Hirsch in Manolzweiler (Winterbach) has been a place of hospitality since 1629. Now in its fourth generation, the inn is run by Simone and Sven Waldenmaier. The couple took over in 2006, bringing experience from renowned kitchens such as the Hotel Bareiss and St. Moritz. Their vision: to uphold the tradition of Swabian country cooking while evolving with the times.
Simone and Sven are both masters of their profession. Sven is a master chef; Simone holds a master’s degree in restaurant management. Together, they have built a kitchen philosophy rooted in honesty and respect. They work with trusted local suppliers, and their cooking is seasonal, regional, and unpretentious. “Ehrlichkeit statt Spielerei” – honesty over gimmicks – is their motto. This farm-to-table approach is the foundation of everything they do.
In 2026, Michelin awarded the Landgasthaus Hirsch a Bib Gourmand for its good quality, good value country cooking. The menu changes with the seasons: a hearty beef soup with Flädle, oxtail ragout in Lemberger sauce with Spätzle, or char fillet on creamy risotto with morels and asparagus. The atmosphere is equally inviting – whether in the traditional parlor, the vaulted cellar, or the beer garden and terrace. Children and pets are welcome, and there is even a playground. It is a place where deep contentment and simple pleasures come together.
