The story

Sparhelt Bistro in Balatonfüred – Bib Gourmand Modern Cuisine on Lake Balaton

Sparhelt Bistro: Eleven Years of Growth on Lake Balaton

For over a decade, Sparhelt Bistro in Balatonfüred has been a story of steady evolution. The team started young, learned relentlessly, and built what they describe as the best possible crew. That dedication was recognised in 2022 when Sparhelt received its first Michelin Bib Gourmand award—a distinction for good quality, good value cooking that the team has proudly retained every year since.

Under the guidance of Chef Balázs Elek, the kitchen turns out thoughtful modern cuisine that balances creativity with a sense of place. The menu changes with the seasons, but recent dishes show the kitchen’s range: a velős pirítós (pork brains ragout on toast) with smoked beef tongue and cherry tomato salad; a slow-roasted mangalica pork neck with cornichon-mustard sauce, new potatoes, asparagus, and a silky green pea purée; and a wild garlic "risotto" made with egg barley, ricotta, and a deep-fried egg yolk.

The wine list leans heavily on Hungarian producers, with thoughtful pairings for each course. A five-course tasting menu is available, as is a vegetarian degustation, both with optional wine or non-alcoholic pairings.

Set on Szent István tér in the heart of Balatonfüred, Sparhelt offers indoor and outdoor seating, and welcomes guests for lunch and dinner Wednesday through Sunday. It remains, above all, a place that values substance over flash—and has the awards to prove it.

Set in the old town of Balatonfüred, Bistro Sparhelt is among the most acclaimed gourmet restaurants in the Balaton region. True to its name, Bistro Sparhelt is at once modern and rustic; its dishes can feel nostalgic – yet the overall impression is of boldly innovative, forward-looking cuisine. Housed on the ground floor of a modern residential building, the interior opens onto a spacious, leafy terrace. The young team is well trained, with the owner’s presence lending the place distinctive character. At every turn, she brings the care and attention that make it clear the restaurant is in the best of hands. Open for both lunch and dinner, Sparhelt blends elevated fine dining with the more relaxed pleasures of playful cooking. Imaginative use of ingredients and exceptional technical prowess define the plates: colourful and exciting, they emerge from the show kitchen as pleasing to the eye as to the palate. Worthy of note is that some produce comes from their own garden. Beyond the à la carte offer, a five-course tasting menu provides the full experience, available in both meat-based and vegetarian versions. The menu draws on Hungarian as well as international flavours, with playful dishes such as an appetiser showcasing the full range of mushrooms, or kohlrabi főzelék (creamed kohlrabi) that looks nothing like the home-style dish Hungarians grew up with. Especially memorable was the seafood soup with fennel, beautifully chargrilled octopus, shrimp and mussels. Even with a seemingly simple guinea fowl suprême, the kitchen excels – served with a savoury “muesli,” roasted carrot, carrot cream and a ratatouille jus that lifts the dish to new heights. The wine list is carefully curated, offering both Hungarian and international labels, as well as local producers, with many options available by the glass. Since our visit, the restaurant has welcomed a new chef: Roland Varga now leads the kitchen, continuing Sparhelt’s well-honed fine bistro style.
