Borkonyha Winekitchen: Modern Hungarian Cooking in Budapest

On Sas utca, a short walk from the city’s grand boulevards, Borkonyha Winekitchen has earned its place among Budapest’s most accomplished tables. The restaurant’s name—Wine Kitchen—signals its dual focus: precise, ingredient-driven cooking matched with an unusually deep wine program. This approach, recognised with a Michelin star, draws a steady stream of diners who come for the kind of meal that feels both inventive and grounded.

The kitchen works in a modern Hungarian idiom, one that respects local produce and tradition while looking outward. Dishes change with the seasons, but the sensibility remains constant: clean flavours, careful technique, and a refusal to overcomplicate. A recent menu might begin with a water buffalo tartare brightened with kápia pepper and hazelnut, or a delicate pike-perch with asparagus and wild garlic. Heartier plates follow—saddle of venison with duck liver and rhubarb, or squab with wild broccoli and mustard. The cooking is confident, letting each element speak.

Borkonyha offers two degustation menus—four courses or six—as well as an à la carte selection. For groups of ten or more, the tasting menu is the only option, a policy that speaks to the kitchen’s preference for a controlled, thoughtful service. Wine pairings are available at two levels, including a premium selection that draws heavily from Hungary’s best producers. The wine list itself is a serious document, with bottles organised by style and strength: crisp whites from Somló and Tokaj, bold reds from Villány, and sweet finishes like Szepsy Aszú or a 20-year-old Graham’s Tawny.

The dining room is understated and comfortable, with outdoor seating in warmer months. Service is professional without stiffness, and the atmosphere remains focused on the meal. Borkonyha is open for dinner Monday through Friday, with a longer Saturday service that begins at noon. Sundays and public holidays are reserved for rest.

For those seeking modern cuisine in Budapest that earns its accolades quietly, Borkonyha Winekitchen delivers. It is a restaurant that trusts its ingredients, respects its guests, and lets the wine do some of the talking.

Under the direction of celebrity chef Ákos Sárközi, Borkonyha became a cornerstone of Hungarian gourmet dining. Today, it’s head chef Csaba Puskás who leads the kitchen and develops new dishes. Located near the Basilica, Borkonyha welcomes a steady flow of tourists, but it’s also heartening to hear the hum of Hungarian at neighbouring tables—the owners have made a conscious effort to keep the restaurant accessible. Though the kitchen is top-tier, Borkonyha’s quintessential charm lies in its lack of pretension. The à la carte offering is guest-friendly: there’s no obligation to opt for the six-course tasting menu, and diners can revel in the experience without the constraints of degustation. With its closely set tables, chalkboard menu and arched ceilings, the space evokes a Parisian bistro—yet the kitchen’s output far exceeds bistro expectations. The seasonal menu gives pride of place to ingredients, and in both complexity and presentation, Csaba Puskás’s creations uphold the high standards established by Sárközi. Desserts are a particular highlight, with pastry chef Anett Béres’s creations garnering consistent praise. The “Celery, Pear, Chestnut” dish we tried was a masterclass in how to elevate a humble root vegetable, with celery appearing in multiple forms—from a grilled ‘steak’ and silky purée to delicate steamed cones. The striking “Chocolate, Beetroot, Lemon Verbena” dessert offered an intensely sweet chocolate base brightened by beetroot in shifting hues and a lively play of sweet and sour notes. The influence of the two owners’ backgrounds is evident in the restaurant’s smooth operation. Zoltán Kalocsai is a trained sommelier, while Tamás Horváth brings a wealth of experience in hospitality. The wine list is a standout, with thoughtful pairings offered for each dish and the option to order everything by the glass. Service is polished, knowledgeable, and warmly conversational, with wine or non-alcoholic pairings suggested throughout and dessert courses matched to sweet wines. After fifteen years, Borkonyha remains the benchmark for relaxed fine dining.
