The story
Essência Restaurant - Tiago & Éva brings rare Portuguese cuisine to Budapest through the partnership of chef Tiago Sabarigo and hospitality manager Éva Sabarigo. Tiago arrived from Évora in 2015 after training at London’s Gordon Ramsay’s Petrus and Lisbon’s Ritz Four Seasons. Éva transitioned from ten years in luxury hotel front-of-house roles to manage their private dining program. Their shared focus on childhood flavors shaped a concept that blends Iberian techniques with local ingredients.
Arched ceilings and exposed brick walls frame the dining room, while hand-painted azulejo tiles add a quiet Mediterranean touch. An open kitchen sits at the center of the space, placing guests within sight of the pass during service. Wooden booths line the perimeter for quieter conversations, while central tables offer a direct view of the plating process. This layout supports the team’s balance of attentive service and relaxed warmth.
The kitchen builds its menu around precise textures and regional pairings across five or seven evening courses. A tender octopus preparation arrives alongside leek and squid ink, showcasing the chef’s recurring signature style. Another plate reimagines quail paprika stew with a deeply layered sauce and flawlessly cooked meat. Dinners conclude with bolo de bolacha presented as a ceramic starfish, bridging nostalgia and modern technique.
Beverage directors curate a cellar highlighting Hungarian estates, Portuguese vineyards, and select international producers. Carefully crafted non-alcoholic pairings accompany the main progression for guests who prefer alternatives. The approach earned a sixteen-point rating from Gault&Millau for 2026, recognizing how consistently the kitchen honors Portuguese cuisine alongside local ingredients.
