The story
Fausto’s Ristorante in Budapest delivers consistent Italian cooking that has anchored the capital’s dining scene since 1994. Chef Fausto Di Vora learned his craft in the Carnia region of Friuli Venezia Giulia before working alongside mentors Ferdinando Alzetta and Angelo Paracucchi. He opened the venue with his wife Anikó, creating one of the city’s earliest dedicated Italian kitchens, a commitment to straightforward preparation that later earned a Gault&Millau rating of 14.5.
The meal opens with a fragrant fish soup featuring prawns and sea bass gently poached in a ginger-spiced broth. House-made strozzapreti carbonara follows, showcasing a firm pasta shape coated in a smooth sauce that balances rich eggs with aged cheese. These signature preparations appear on the menu year-round, receiving subtle seasonal adjustments while preserving their original structure and honoring the chef’s belief that balanced nutrition belongs at every table.
Relocating from Dohány street to Buda allowed the team to replace cramped layouts with a building defined by clean lines and sharp geometry. Large windows open onto a glass terrace that visually merges the indoor dining area with the courtyard, while an exposed kitchen anchors the main floor. Staff coordinate closely to guide course timing and bottle selections without interrupting conversation, creating an atmosphere that mirrors classic Italian ristoranti and favors structured service over casual familiarity.
