The story
Fausto’s is the expression of chef Fausto Di Vora’s roots. Born in Carnia, a special corner of the Friuli Venezia Giulia region, he carries the values of his childhood into his kitchen. After training under masters Ferdinando Alzetta and Angelo Paracucchi, his cooking evolved around a core belief: “When simplicity becomes culture, a healthy and balanced cuisine is born.” Vegetables are essential, fresh seafood is a favourite, and meat is enjoyed with moderation. Even vegan and vegetarian dishes are regularly featured on the menu, reflecting a deeply personal approach to nourishment.
In late 2024, after three decades in Dohány utca, Fausto’s moved to a new home on Szilágyi Erzsébet fasor 77. The change marked a deliberate shift – a decision to leave the familiar path for something more aligned with the chef’s evolving vision. The new space, an iconic location in Budapest, now hosts the contemporary Italian cuisine that earned the restaurant its Michelin Recommended status. Diners can expect the same thoughtful, seasonal dishes that have defined Fausto’s for years, now presented in a refined environment that includes outdoor seating and private dining options.
The menu is built around Fausto’s Signature dishes – iconic plates that have been reinterpreted seasonally over the years with only minor adjustments. The kitchen stays true to the chef’s principle of natural, balanced eating, without unnecessary complexity. Each course reflects the produce of the moment, whether it’s a vegetable-focused starter or a carefully sourced seafood main. The result is a contemporary Italian experience that feels both personal and deeply connected to the traditions of the chef’s homeland.
