Kovács builds intense, deep compositions from regional staples, such as the Gulyás Royal made from beef cheeks or stuffed cabbages from Szabolcs county featuring textured Mangalitsa pork balanced with pickled and sweet varieties. A fish soup using catch from Akasztó simmers with polenta right in the hot broth before guests, demonstrating the precise technique behind the joyful presentation.
