Gault&Millau — 14.5
Since 2022, Hoppá! has been part of one of downtown’s restaurant-lined streets. The tourist-heavy location shapes the crowd, but it clearly deserves the attention of local diners, too. Both the kitchen and service are eager, with every single dish featuring an audacious twist.
The large, L-shaped interior is designed in Scandinavian style, blending industrial and natural elements. Huge windows look out onto the street, where a generous terrace welcomes guests from spring through autumn. The tightly curated menu and separate chef’s specials lean heavily into Hungarian classics, with Italian and French influences scattered throughout. The wine list is equally well-assembled, with both Hungarian and international labels, aiming for breadth in price with many options available by the glass.
The starter titled Potato, wild garlic, mushroom is a full-blown flavour parade: potato appears in four textures, paired with punchy bottarga, truffle cream, and a citrusy wild garlic pesto—all crowned with umami-rich parmesan pearls. The paprika chicken, a Hungarian staple, comes here as sous-vide, then crisped chicken thigh, with spaetzle enriched with smoked cheese. The well-balanced paprika sauce is poured with flair at the table from a small pitcher. For dessert, the curd dumpling is layered but not over-thought—it arrives on sweet crumble and blueberry jam, given a zing with salty lime zest and tart red berries, finished with a light Greek yoghurt foam.
This is modern, free-spirited Hungarian (and international) cuisine—a choice you can trust in the heart of the city.
