Stand25 Bisztró is the Budapest outpost where chefs Széll Tamás and Szulló Szabina turn their fine-dining expertise into something looser, warmer, and unmistakably Hungarian. Located on the Buda side, a short walk from the Chain Bridge, the bistro earned a Bib Gourmand shortly after opening and now holds a Michelin Recommended distinction – a testament to the uncompromising quality and seasonal focus that define the kitchen.

The philosophy is straightforward: respect the ingredient. Dishes are built around what is best at the moment, drawing exclusively from Hungarian producers. The menu changes regularly, but a few signature plates remain constant – gulyásleves and somlói, for instance, have become inseparable from the chefs’ names. Guests can also expect a langos topped with Balaton cheese and cured ham, duck liver terrine with sour cherry chutney, or a boar cheek stew with buttered dumplings. The selection is proudly Hungarian, yet free from rigid tradition.

Service with directness and care

The dining room is led by Csahók Ibolya, whose team delivers the same attentiveness as a high-end restaurant, but in a more direct, friendly style. The atmosphere is relaxed – a bistro where the clatter of plates and the hum of conversation feel natural. The drink list spans Hungarian and international wines, craft beers, and cocktails, all chosen to complement the kitchen’s seasonal rhythms.

Stand25 Bisztró is open for lunch and dinner Monday through Saturday, with outdoor seating available. It is a place that takes joy seriously, and lets the ingredients do the talking.

The chef duo of Szabina Szulló and Tamás Széll are nothing short of culinary icons. Having scaled the heady summits of fine dining and Bocuse d’Or, they revealed a more personal side of their craft with Stand25 Bistro – their bridge to a broader audience. While it has become commonplace for top chefs to revisit home-style dishes, Szabina and Tamás have distilled this ethos into a clear mission statement, restoring dignity to once‑derided classics. Their Cordon Bleu – long a culinary punchline – has become an emblem, while humble fare such as egg noodles with scrambled eggs, layered potatoes or a simple jam pancake is elevated to unparalleled heights. After their halcyon days at the downtown market, the bistro upped sticks to relocate to Buda. The two-storey space, complemented by outdoor tables, blends effortlessly with the easy rhythm of Krisztinaváros – a setting perfectly attuned to Stand25’s self‑declared style: “contemporary Hungarian eatery.” Under Ibolya Csahók’s poised direction, service runs like clockwork; even at full throttle, there is no sense of haste. The secret of the kitchen lies in its devotion to ingredients. For even the most modest dishes they hunt down the finest flour, the best eggs; multi‑award‑winning Balaton cheese crowns both the French onion soup and the famed Stand25 lángos. A green pea soup may not usually set the heart racing, yet their mint-scented version bursts with vitality and freshness. The Kiev chicken is a winking homage – the apotheosis of the much‑maligned chicken breast, its golden crust concealing a slow‑melting core of herb butter. The chefs’ celebrated Somlói (Hungarian sponge cake), is rivalled only by their aranygaluska (golden dumplings) – indulging in these Stand25 signatures stirs nostalgic memories of grandma’s kitchen rendered with a culinary poetry she perhaps might never have imagined possible.
