The story
Textúra, on Sas utca in central Budapest, describes itself as a place where high-end gastronomy makes room for playfulness, experimentation, and discovery. That spirit is evident from the moment you step inside. The room feels both polished and inviting, a setting for cooking that is serious in technique but never stiff in expression.
The kitchen is led by executive chef Sárközi Ákos, whose pedigree includes a Michelin star. Here, he draws on traditional Hungarian methods – boiling, smoking, confiting – and layers them with the ingredients and techniques of modern international cuisine. The result is a menu that feels grounded in its region yet open to the world. Dishes like venison ham with chicory and cranberry, or trout with basil and lemon, sit alongside a porchetta with dumplings and sage, and a lamb saddle with sorrel and kale. Vegetables are given equal attention: cabbage with tofu and jasmine, or carrot with green apple and rose.
Textúra offers both a full à la carte menu and a daily changing degustation. The four-course tasting menu (36,000 HUF) can be paired with a wine flight curated by sommelier Juhász Krisztián, or with an organic juice pairing. A six-course option (49,000 HUF) provides a deeper exploration of the kitchen’s range. The wine list is a thoughtfully selected mix of Hungarian and international bottles, with many available by the glass.
The restaurant’s 2026 Michelin Recommended award reflects the consistency and ambition of the cooking. It is not a badge of flashiness but a nod to the kind of restaurant that earns its reputation dish by dish. Textúra is a destination for anyone who wants to see how modern cuisine in Budapest is evolving – with respect for the past and a clear eye on the future.
