The story
Located in the Józsefváros district of Budapest, YÜME carries forward the legacy of two predecessor venues while executing a precise Japanese-leaning Asian fusion. Founders Emese Kámán and head chef Martin Nádudvari steer the daily service with clear intent. This experimental approach recently secured a 12 score from Gault&Millau.
Ramen anchors the early offerings but quickly yields to a rotating selection of shared plates. Miso glaze caramelises over roasted aubergine before a shower of smoked bonito flakes adds depth. Razor clams arrive dressed in bright chimichurri, while the pork cheek korokke and paprika chicken udon balance rich sauces against crisp textures.
Unadorned tables and low lighting frame the counter where small plates pass continuously. Staff move through the space with quiet efficiency, ready to explain the reasoning behind each flavour combination. Wine selections remain modest but are available by the glass, complementing an original cocktail list.
