The story
Alkimista Kulináris Műhely calls itself a “culinary workshop,” but the experience is far more intimate. Hidden in the heart of Szeged, this small dinner restaurant was born from a single question: can traditional Hungarian cuisine be made lovable in the 21st century? The kitchen draws from the legacy of the Great Hungarian Plain, the wisdom of old kitchen matriarchs, and the writings of herbalists, applying modern techniques to centuries-old recipes. The result is a form of Modern Cuisine that feels both rooted and surprising.
The restaurant opens three evenings a week, Thursday through Saturday, for a single seating. Each dinner is an eight-course tasting menu, personally hosted by the chef from start to finish. Michelin describes the space as “a beautiful, elegant spot” and “a secret oasis.” The chef leads the evening with storytelling, referencing old and new culinary customs, celebrations, and rituals. The menu changes every two to three weeks, following the micro-seasons of the region. One summer menu might evoke a meadow with honey-soaked flowers, fresh hay, and fairy ring mushrooms; another might recall the harvest with polenta from the embers, mower’s soup, and baked peaches.
Regionality is not a trend here but a culinary mother tongue. The kitchen works with ingredients from the surrounding plain and pairs each course with low-intervention wines, own brews, or non-alcoholic infusions. The menus are narratives of the landscape, drawing on the traditions of Hungarian peasant cooking and the writings of apothecaries. This is Modern Cuisine that speaks with a distinct local accent.
Alkimista’s distinctive approach has earned it a place in the Michelin Guide as a Recommended restaurant. In 2025, it was also named Progressive Hungarian Kitchen of the Year. But the restaurant’s greatest pride remains the direct connection with its guests. “Every dinner at Alkimista is personally hosted by the chef,” the team notes, “making our small restaurant truly one of a kind in the country.” For those who love discovering a place off the beaten path, Alkimista offers a rare blend of intimacy, craftsmanship, and a deep sense of culinary heritage.
