The Setting

Padi occupies a distinctive building in the heart of the Tokaj-Hegyalja wine region, with a terrace that offers sweeping views of the surrounding vineyards. Before entering the dining room, guests are invited to enjoy a drink at the elegant bar, which showcases Sauska’s own wines. The team describes their home as a place "where vineyards and forest meet," and the dining experience reflects that connection to the land.

The Chefs

Resident chef Gerák Máté is deeply rooted in Tokaj. He draws daily inspiration from the local produce: wild mushrooms, honey, figs, and the region’s unique volcanic soils. Executive Chef Bicsár Attila, who has worked in fine-dining kitchens across Europe, the United States, and Japan, brings a global perspective. His cooking balances the comfort of home-style cooking with refined techniques, often incorporating vibrant South American flavors alongside contemporary Hungarian classics. The team is completed by host Simonyák László, who ensures a warm, professional welcome.

The Menus

The kitchen offers a five-course tasting menu that changes with the seasons, reflecting the rhythms of nature and the winery’s cellar. A dedicated “Homage to Tokaj” menu pairs each course with a selection of local sparkling, dry, and sweet wines. For those who prefer to choose, an à la carte selection is available. Guests frequently mention the thoughtful extras from the chef and the knowledgeable, unobtrusive service.

The Wines

As part of the Sauska estate, Padi’s wine list is a deep exploration of Tokaj. It ranges from traditional Aszú to modern dry whites and sparkling wines, with additional selections from Sauska’s Villány estate and a curated list of international references. The restaurant also organizes guided tastings, including a Tokaj Terroir Tasting and a combined Signature Tasting.
