The kitchen is led by Michelin-starred Chef Chris Malone, whose approach blends bold regional flavours with precise technique. The menu draws on the culinary traditions of the archipelago, offering a Rijsttafel experience—a Dutch-Indonesian legacy of multiple small dishes—alongside a dedicated Seafood Grill and a signature tasting menu called A Cut Above.
