That is the idea behind Land to Sea, the John Street restaurant from Chef/Owner Julian Wyatt and his wife Katia. Their menu draws from mountain lamb and grass-fed beef, locally landed fish, farmed mollusks, and vegetables from the sandy Maharees. Where necessary, they source from further afield in Ireland, such as pork from the Crowe family farm in County Tipperary. The name captures the connection between the land and the sea that surrounds this corner of West Kerry.

The People Behind the Kitchen

Julian Wyatt is English-born to a Cork family; Katia is of Italian and French parentage. The couple met in France, where neither spoke the other’s language. They communicated through drawings, gestures, and a translation dictionary, and that persistence has shaped their approach to hospitality. They have lived and worked in West Kerry for years, looking for the right place to realize Julian’s vision: bringing modern culinary sensibility to the highest-quality Irish ingredients. Their young son, Seán, is sometimes seen around the dining room, adding to the warm, European-influenced atmosphere in cozy Irish surrounds.

Modern Irish Cuisine, Defined

The term “Modern Irish Cuisine” is often used but seldom defined. For Chef Julian, it means one foot in Ireland’s agrarian past and the other in possibility. He uses good, honest produce that might have been found in grandmothers’ kitchens, then applies a nuanced hand to coax rich, exciting flavours. In-house curing, smoking, pickling, and fermenting are techniques resurrected from Ireland’s past and updated with contemporary sensibility. The result is a cuisine rooted in tradition but influenced by the finesse of European cookery.

To begin, there might be Dingle Bay Crab Salad with locally grown leaves and lemon gel, or Kerry Lamb Merguez and Gubbeen Cheese Croquettes with confit red onion and saffron aioli. Main courses include Dingle Hake with asparagus, samphire, and champagne sauce, or Aged Angus Fillet Steak Medallions served pink with a peppercorn and brandy sauce. For dessert, Dingle Honey and Dingle Whiskey mousse with honeycomb and sea salt ice cream is a local favourite. A six-course tasting menu is also available, showcasing the kitchen’s full range.
