The story
Solas, on Strand Street in Dingle, serves Spanish-inspired small plates with a distinctly Irish soul. Owners Nicky Foley and Ann Connell run the restaurant with a deep commitment to local sourcing: they grow their own organic vegetables, raise hens for eggs, and harvest honey from their own wild beehives. The kitchen also forages wild garlic, blackberries, and coastal plants and seaweeds to intensify flavour.
The menu is designed to be flexible – there is no set dinner format, so you choose your dishes in the order that suits you. Pintxos range from a Rock Oyster with smoked trout caviar and soy & yuzu to a Solas Croquette with chorizo and Manchego. Larger tapas-style plates include Dingle Lobster Ravioli with a lobster and kimchi bisque, Roast Scallops with morcilla black pudding and ajo blanco, and a West Cork Black Angus Ribeye steak with Szechuan peppered veal jus.
Solas has been recognised by the Michelin Guide since 2019 and holds a Bib Gourmand, an award that celebrates good quality, good value cooking. The restaurant’s relaxed, ingredient-led approach has earned praise for getting small plates service exactly right. It is open seven days a week for lunch and dinner, and booking is recommended as the restaurant tends to fill up early.
