The story
In the heart of Dublin, on Harry Street, Amai by Viktor is a fine dining restaurant that tells a deeply personal story. Chef Viktor Silva, a Brazilian chef with over a decade of experience, draws on his heritage and training in Michelin-awarded kitchens to create a menu that fuses Brazilian and South American cuisine with Irish ingredients. The name Amai, meaning “mother” in the Shona language and “to love” in Brazilian Portuguese, is a tribute to the strong women in his family.
The idea for Amai took shape during the pandemic, when Silva found himself reflecting on family, identity, and legacy. His grandparents and parents grew up with very little, cooking to survive and selling food in the city. What began as necessity became a source of joy, and their sacrifices sparked his passion for cooking. Now, he and his team bring fresh, exciting takes on Brazilian cuisine to Dublin.
Silva’s culinary journey began in Brazil, where he graduated in Culinary Arts and worked at top-tier establishments including O Butiá and the State Governor’s Office. After moving to Ireland in 2016, he refined his skills in Michelin-awarded kitchens. Additional training in France completed his education. At Amai, he is joined by General Manager Alex Radu, who brings over 20 years of hospitality experience from Greece and Ireland, and Assistant General Manager Mariana Vasconcellos, whose background in business and coaching ensures seamless service.
The restaurant’s atmosphere reflects its ethos—warm, welcoming, and rooted in family. The menu (available at dinner Wednesday through Saturday) features tasting menus, including a Folklore Menu, Lunch Tasting Menu, Vegetarian Menu, and seasonal offerings like a Summer Menu. Wine pairings and a curated drinks list complement the meal. Amai has earned a Michelin Recommended award, a recognition that underscores the quality of Silva’s cooking and the team’s dedication.
