In Blackrock Market, Liath has earned two Michelin stars for a dining experience that is as much about the people in the room as it is about the food on the plate. The restaurant’s philosophy is clear: it is not the expression of one individual, but the shared work of a small team moving with the same intention. Ideas are shaped collectively, from a thought to a flavour, then a dish, evolving through conversation, tasting, and reflection until it feels complete.
Ireland provides the foundation for everything at Liath. The Atlantic coastline, the soil, and the weather define the harvest. The fishermen, farmers, growers, and foragers who understand the land and sea through experience and patience are the beginning of every ingredient. The kitchen’s responsibility is to honour that effort, treating ingredients with respect and restraint so their character remains present in every moment.
The experience is presented as a seasonal tasting menu, designed as a progression of dishes that unfold gradually throughout the evening. Guests are asked to arrive at 7.30pm so that everyone in the room may begin the journey together. The menu moves with the rhythm of the seasons, with dishes like Kelp-katsuobushi-Toffee, Strawberries and Wild flowers in summer, or Fermented Carrot and Elderflower, Stout-Treacle-Oats, and Aged Parmesan-Eel-Marjoram in winter.
Liath only becomes complete when the room fills. The experience exists in the relationship between the team and the guests. Each evening begins with a shared sense of anticipation, and as the menu unfolds, something quietly forms between the people creating the experience and the people receiving it. For a few hours, everyone in the room becomes part of the same moment. The guests are not simply observing the experience; they are part of it.
