The Vision Behind Library Street

Library Street Dublin, located at 101 Setanta Place, is the project of chef Kevin Burke. A Dubliner, Burke trained at Ireland’s only two-Michelin-starred Restaurant Patrick Guilbaud before moving to London, where he was sous chef at Jason Atherton’s Pollen Street Social and later head chef at Jun Tanaka’s The Ninth, earning a Michelin star in its first year. He returned to Dublin in 2019 and opened Library Street in November 2021.

Burke’s philosophy is refreshingly direct: “My main focus is to make the most delicious food I can.” He builds his menu around exceptional Irish ingredients, supplemented by French and Italian products where they are simply too good to ignore. His cooking is grounded in classic French techniques, but the result is a contemporary, balanced style that puts flavour first.

The Team and the Experience

The restaurant’s team is central to its identity. Head chef William Gnudi, originally from Bologna, has worked in celebrated kitchens including three-star Enoteca Pinchiorri. Restaurant manager and sommelier Laoise Dempsey curates wine lists that reflect her international travels, with a focus on education and accessibility.

The menu changes with the seasons. Recent dishes include Hamachi with plum, tomato, and calamansi consommé; spatchcock quail with Castelfranco and tzatziki; and wild Wicklow venison en croute with black winter truffle. A private dining room offers a chef’s choice menu, and the team works closely with local suppliers like McNally Family Farm to source produce at its peak.

Recognition and Ethos

Library Street has been recognised by the Michelin Guide, earning a Recommended award for 2026. The restaurant’s ethos is simple: food matters. Burke notes, “We never want our food to leave a bitter taste.” This commitment to ethical sourcing and seasonality is woven into every dish, making Library Street a distinctive addition to Dublin’s modern Irish and French cuisine scene.
