The story
Since 2018, Head Chef Keelan Higgs and his brother Aaron have been running Variety Jones from a small space on Thomas Street in Dublin 8. The restaurant’s ethos is built around family—Keelan often draws on Higgs family memories to create dishes, and the entire experience is designed for sharing. Food arrives family-style, encouraging guests to break bread together and focus on the people at the table.
The kitchen works with local, organic, and seasonal suppliers whenever possible. Aaron forages with his children, and their finds frequently appear on the plate. The wine list, curated by sommelier Kathleen, focuses on unique bottles from small producers.
The restaurant offers a single chef’s-choice sharing menu. A pescatarian option is available on request, but the kitchen does not accommodate vegetarian, vegan, dairy-free, or egg-free diets. Advance notice of allergies or dietary restrictions is essential.
Variety Jones earned its first Michelin star in 2019 and has retained it each year since, a reflection of the consistent, high-quality cooking that defines this intimate dining room. With just twelve tables and no waiting area, the experience is deliberately personal and unhurried.
