The story
Everett's is the realisation of chef Peter Everett's long-held ambition to open his own restaurant back in his native Waterford. After training in Dublin under Michael Quinn at Waterford Castle—where he was awarded Eurotoques Young Chef of the Year—and later working with Graham Neville at Restaurant Forty One, Peter returned home. Together with co-owner and partner Keith, he created a restaurant that reflects his deep respect for high-quality produce and the simple enjoyment of a well-cooked meal. The kitchen's modern Irish cuisine has earned the restaurant a Michelin Bib Gourmand for 2026, a mark of good quality, good value cooking.
The restaurant occupies the remains of the 15th-century John Collyn House, the home of James Rice, an eleven-time mayor of Waterford and a wine merchant who traded mainly in Spanish wine. The Front Room, with elements dating back to at least the 1460s, is ideal for long nights spent chatting over a meal and a bottle of wine. Below, The Vault offers an intimate, historic wine cellar space, perfect for a private dinner or a romantic meal for two. Both dining rooms are equipped with air filtration systems for safety.
The menu changes with the seasons and availability of produce. A typical dinner might begin with Seared Wexford Scallops with peas and charred baby gem, or Duncannon Smoked Salmon Tart with sea herbs. Mains include Fillet and Braised Shin of Derek Walsh's Beef with baked onion and smoked bacon, and Fish of the Day from Liam Burke with Dublin Bay Prawns and tortellini. Desserts range from a Raspberry Soufflé with pistachio ice cream to a Custard Fritter with rhubarb sorbet. A three-course dinner is priced at €56. A pre-theatre menu, offering three courses for €42, is available at early sittings, while Friday and Saturday lunch is served from 12.30pm. The wine list is carefully chosen, with a strong selection of organic and biodynamic bottles from Europe and beyond.
