The restaurant’s Michelin star recognizes this singular approach. Rossi’s cooking is rooted in the scents of the woods and olive groves, with every ingredient selected for its quality. The simplicity of the finest raw materials and a strong bond with the territory of Seggiano are fundamental to the kitchen at Silene. Rossi has developed a deep respect for ingredients and their techniques, guided by the desire to reach the true essence of food, returning to origins to rediscover an intimate relationship with the land. While Tuscan produce plays a leading role, Rossi also draws on traditions from across Italy, curating a selection of products from the entire peninsula.
Rossi’s passion for cooking and nature was passed down by his parents, who taught him secrets of the land that cannot be learned from books, only from lived experience. Skilled hands work carefully chosen ingredients to create house-made pasta, an emblem of a kitchen built on know-how. Rossi’s rule is never to use too many ingredients, so every flavor is traceable to its source: “My philosophy is simple and coherent. Cooking is an applied art, so it’s important to know the raw materials well, where they come from, and the gestures to work them.”
A carefully curated wine selection, including rare old bottles, enhances every dish. For Rossi, “Old wine is not just a pleasure for the palate, but also for the mind. The mere thought that a wine has been waiting there for decades, while life flowed by, is something beyond. It is one of the great powers of wine: sometimes it can go beyond the life of man himself.”
For thirty years, Rossi has worked side by side with Marinella “Lella,” his right hand and irreplaceable interpreter of every recipe. Their dynamic — Rossi proud and stubborn, Lella tenacious and straightforward — adds an effervescent spirit to the pursuit of excellence at Silene.
