The story
Impronta, in the small town of Albairate just outside Abbiategrasso, is the project of chef-owner Andrea Colombara. The restaurant’s name—meaning “imprint”—reflects a cooking style that is deliberate yet unadorned. As Colombara puts it, “the hand of the chef is at the service of the ingredients,” allowing the raw material to speak without baroque or contrived constructions. Colombara leads a small, dedicated team. Chef Ars works alongside him in the kitchen, while baker Massimo handles bread and pastries.
