Chef Fabio Dagrada and his team work with a “rigorously expressed” approach, revisiting traditional Ligurian recipes with careful selection of raw ingredients. While the menu changes, the philosophy remains rooted in the territory—including seafood, the region’s natural bounty. The restaurant’s wine cellar, “Il Lambertino,” lies directly below the dining room. With nearly 450 labels of Italian and international wines, stored at a constant 16°C and 70% humidity, it is also ideal for private dinners and tastings. The wine list is curated to complement the kitchen’s offerings, and the sommelier’s pairings are a highlight.
