The story
The number 21.9 refers to the birth date of Chef Flavio Costa’s daughters. It is a personal, direct name for a restaurant that aims for the same qualities in its cooking: warm, modern, instinctive, linear, and immediate. Located within the Tenuta Carretta estate in Piobesi d’Alba, the restaurant is surrounded by the vineyards of the Langhe and Roero.
Chef Costa describes his food using three words: freshness, lightness, and incisiveness. Each dish is built around just three main ingredients, a discipline that forces clarity and precision. His style draws from two distinct roots: the traditions of Liguria, where he was born, and the rich, land-based produce of Piedmont. This creates an exclusive mix of flavours, with plates that might feature vegetables, offal, game, and plenty of aromatic herbs, alongside seafood from his native region.
