In the heart of the Langhe, at Il Boscareto Resort in Serralunga d’Alba, La Rei Natura is the expression of Chef Michelangelo Mammoliti’s singular vision. His cooking is natural, instinctive, and anchored in memory—a contemporary cuisine that speaks the language of the territory while drawing on knowledge gathered over fifteen years of travel and study.
The foundation of every dish is the vegetable world. Chef Mammoliti and his team cultivate herbs, roots, spices, and rare plant species in the restaurant’s own 200-square-metre greenhouse and in a dedicated vegetable garden in Barolo. This living larder is the heart of his MAD100%Natura® philosophy, a constant search for the purest interpretation of the plant element.
Three tasting paths guide the experience. Emozione is a journey into personal memory, a dish meant to revive a happy moment. MAD100%Natura® is the chef’s worldview on a plate. Voyage traces the map of a journey—the stops that transformed Mammoliti’s cooking into what it is today. Each menu is a total, unrepeatable experience, deeply tied to the valleys and hills of this extraordinary landscape.
The wine list begins with the great Nebbiolo-based wines of the Langhe, then expands across Italy to small producers, and reaches beyond to France, Spain, Armenia, and Georgia—honouring both legendary names and master vigneron.
This commitment to nature and place earned La Rei Natura three Michelin stars, a recognition of exceptional cuisine that remains profoundly personal. As the chef says: “It will always be nature that guides my actions and my choices. I am the one at its service.”
