The story
Sintesi is the result of a journey shaped by passion, research, travel, and a clear vision that transformed how its chefs approach cooking. The guiding philosophy is essentiality: an authentic return to flavor, quality ingredients, and respect for the planet. As the restaurant itself states, “Sintesi is essentiality: to enclose in a dish the right balance, eliminating the superfluous.” This ethos is woven into every plate at the Michelin one-star restaurant in Ariccia.
The team is led by two chefs whose international experience is deeply felt. Sara Scarsella, a Roman chef who trained at Alma, worked at Noma and Geranium in Copenhagen and at Rockpool in Sydney. In 2022 she won the national final of Emergente Chef, and in 2024 was named Best Chef by Identità Golose. Alongside her, Matteo Compagnucci, a chef from Le Marche, worked as head pastry chef at Caino before stints at Noma, Brace in Copenhagen, and Bennelong at the Sydney Opera House. Together, they bring a shared vision of contemporary, seasonal cuisine that balances technique and respect for raw materials.
The menu at Sintesi is a journey between cultures, never opposing, always complementary. It explores new horizons, combining Eastern techniques and Nordic preservation methods to offer an experience that unites distant flavors. The kitchen relies on a daily harvest from the family garden and a network of small Italian farmers, breeders, and producers. Fermentations, marinades, and fish aging are techniques applied to enhance local ingredients while minimizing waste. The wine list is curated as a living agenda, reflecting the rhythm of the seasons, alongside a non-alcoholic proposal of homemade cocktails, juices, and kombucha.
