The story
Ristorante Scola opened in the spring of 1926 in the medieval hilltop village of Castelbianco. Founders Manuelin and Angiolina poured all their effort into the enterprise, and more than ninety years later, the kitchen still reflects that same determination. Three generations of hosts have kept the fires burning, evolving the cuisine while holding fast to the Ligurian roots that define the place.
Today, the dining rooms occupy stone-walled spaces that feel both rustic and refined. The atmosphere is unhurried, with outdoor seating overlooking the surrounding valleys. In 2026, the Michelin inspectors recognised Scola’s consistent quality, awarding it a Recommended status—a nod to the family’s enduring passion and the precision of the kitchen.
Chef’s tasting menus are the heart of the experience. The “4 Passi in Val Pennavaire” (€60) begins with welcome bites and a glass of classic-method Franciacorta, then moves through dishes like wild salmon with corn and Giannetti beans from Nasino, a raviolone with wild boar ragù and potato, and Pancia di manza piemontese with mushrooms and roasted grape. Each course draws on local ingredients and a refined sense of balance.
For those wanting a deeper exploration, the “6 Passi” (€75) adds sashimi of brigasca (local lamb), a Monviso cheese preparation with lemongrass and black truffle, and mallard with mandarin and beurre blanc. The “8 Passi” (€90) ventures further: murena BBQ with prosciutto crudo di Cuneo and fermented prickly pear, ramen with rabbit and eel, and carbonaro cod with almond and parsnip. The enoteca, L’Enostanza, is a vaulted stone cellar holding around 500 labels. Guests can choose a bottle to accompany dinner or sip an aperitivo among the barrels.
