The name itself nods to the “botte Madre” – the mother barrel used in the production of Traditional Balsamic Vinegar of Reggio Emilia. Here, every detail is rooted in the culture of natural produce, from grandmother’s recipes to playful new hybrids that bridge ancient flavours and contemporary ideas.
The kitchen focuses on Emilian cuisine, specifically the traditions of the Reggio Emilia territory, with a strong emphasis on rediscovering lost tastes, seasonality, and short supply chains. All dishes are made entirely in-house, using organic and natural ingredients sourced as locally as possible – a “kilometre zero” approach that defines the restaurant’s ethical stance.
Badessa describes itself as a “temple of Parmigiano Reggiano,” and indeed the region’s most famous cheese features prominently. But the wine list is equally distinctive: exclusively natural wines, with a deep focus on local varieties like Spergole, Trebbiano, Lambrusco, and Malbo Gentile. The restaurant champions independent vintners who work with minimal intervention, unfiltered and as natural as possible. The result is a pairing of territory on the plate and territory in the glass.
This dedication to quality and authenticity has not gone unnoticed. Badessa holds a Michelin Recommended award for 2026, a recognition that aligns with its commitment to honest, ingredient-driven cooking.
