The story
Perched atop a hill in Montaldo Scarampi, Ca' del Profeta is a restaurant and relais that draws its identity from the surrounding landscape of the Monferrato region. The restaurant describes its approach as a sensory experience that brings together the colours of the Monferrato earth, the flavours of Piedmont, a passion for wine, and touches of Brazilian influence.
The kitchen, led by chef Christian Milone, focuses on zero-kilometre and sustainable cooking, aiming to rediscover the relationship between the land and its products. This commitment to locality is reflected in the menu, which presents a contemporary cuisine that reinterprets Piedmontese classics. The “Manifesto Territoriale” tasting menu, for instance, begins with a carousel of Piedmontese antipasti and progresses through dishes like Carnaroli rice cooked in gorgonzola water with brachetto must and crispy gorgonzola, and charcoal-grilled veal flank with smoked bulbs and leaves.
The à la carte selection offers further exploration of the region’s ingredients. Highlights include the “Contaminazioni” starter, described as a journey from Piedmont to the East passing through the sea, and agnolotti del plin filled with oxtail in its own reduction. The cellar, meanwhile, showcases the wines of the area, from the native Grignolino grape to the vibrant Brachetto and the timeless Barbera.
