The restaurant offers two distinct dining experiences. Quote is a visionary yet concrete narrative of Abruzzo — a layered exploration of place, memory, and flavor. Sfuso, on the other hand, is a younger, more playful bistro that stays true to Mammaròssa’s quality philosophy while embracing a pop sensibility. Together, they reflect a kitchen that thrives on contrast: intimate and shared, rooted and forward-looking.
Beyond the table, Mammaròssa runs a cooking school open to everyone. “You don’t need any special knowledge — with us you’ll learn to reproduce many recipes,” the website promises. The school is about more than technique; it’s about sharing food, talking, and looking each other in the eye. New courses are scheduled for autumn 2026.
The restaurant’s commitment to craft has not gone unnoticed. Mammaròssa was awarded “Miglior pane al ristorante d’Italia” (Best Bread in a Restaurant in Italy) by the guide L’Espresso — a testament to the care that goes into even the simplest elements.
Franco Franciosi drives the kitchen’s vision, while his sister Daniela Franciosi brings an equally passionate approach to wine. “More than analyzing a wine by color, aroma, and structure, I wanted to convey the life inside a bottle,” she says. Her work earned her the Premio Speciale at the Maestri del Calice 2025, recognized by Forbes among Italy’s best. The restaurant’s wine list is curated with that same spirit of encounter and story.
Mammaròssa’s contemporary Italian cuisine — with its bistro soul and deep regional roots — has earned it a Michelin Recommendation for 2026. Here, the kitchen doesn’t just cook; it builds a dialogue between the land and the people who gather around its tables.
