The kitchen works with seasonal produce from the best national suppliers, always prioritising quality and freshness. The menu is built around two degustation paths: a five-course journey through the flavours of the territory (€75) and a six-course all-fish option (€85). À la carte dishes change with the season – recent offerings include Carnaroli rice from the nearby Baraggia Biellese with turnip tops and salt cod tripe, a cannellone of leek and smoked potato with Toma cheese foam, and a main of grey Carmagnola rabbit with glazed carrot and caper jus. For those who love game, there is a partridge cooked on the bone with smoked parsnip and a date stuffed with its own liver.
