The story
On Biella’s central Piazza Duomo, Matteo Caffè e Cucina offers a dining experience grounded in the philosophy of its chef. The kitchen is driven by a deep belief in teamwork, where the chef’s hard-won experience meets the fresh energy of young talents. “I offer my experience and my ideas, but I welcome their input and we experiment together,” he notes. Guiding the front of house is his wife, Francesca, an AIS-certified sommelier. It is a family affair, but one that looks forward, not back.
The restaurant’s approach to Modern Cuisine has not gone unnoticed, earning it a place among the Michelin Guide’s Recommended restaurants. The menu reflects a spirit of collaboration and curiosity, though specific dishes are not listed on the website. Instead, the focus is on the process: balancing the chef’s established vision with the constant experimentation that comes from working with a younger brigade.
This ethos extends beyond the kitchen walls. The team recently participated in the “Childfood” project, collaborating with 23 chefs from around the world to create a cookbook for children. The project, which supports the charity Charity:Water, saw Matteo’s team reinterpret every recipe in the book and contribute one of their own. It is a concrete expression of the restaurant’s belief in using cuisine to build bridges. The result is a welcoming spot in Biella where a Michelin recommendation is earned not through rigid formality, but through a genuine, collaborative approach to Modern Cuisine.
