The story
In September 2016, Stefano Bartolini opened Osteria Bartolini in a forgotten corner of Palazzo Dondini Ghiselli, turning ancient stables into a dining room that feels both historic and immediate. The real star is outside: a monumental plane tree, over 280 years old, whose canopy shades summer lunches and evening aperitivi. This is “Il Mare a Bologna” – the Adriatic Sea brought inland, served with the directness of a fishing boat.
The kitchen draws everything from the Adriatic – its seasons, its moods, its traditions. “There is nothing to invent,” the team says. No tricks, no secrets. Just strong roots, the best available catch, and the skill to work it honestly. The result is Italian and Mediterranean seafood that tastes of the coast, not of the city. The Michelin Bib Gourmand, awarded every year from 2017 through 2026, recognises this straightforward, value-driven quality.
