The story
Though part of the Parkhotel Laurin, the Laurin Restaurant in Bolzano has carved out its own place in the city’s dining scene – equally popular with hotel guests and locals. The interior is original art nouveau, a fitting frame for a kitchen that confidently balances classic cuisine with modern interpretations. Regional quality products appear alongside contemporary techniques, each plate reflecting the restaurant’s dual personality: rooted in South Tyrol, yet open to the Mediterranean.
Come spring, the restaurant moves outdoors. From April, tables are set beneath centuries-old trees in the Laurin Park, sheltered by a large canopy that makes the park restaurant usable even in cooler weather. Look up and you might spot the Lebanon cedar where a giant Merano rose has been climbing for years – at 28 metres, it’s the tallest rose in the Alps. Whether indoors or in the park, the atmosphere is relaxed and attentive, with service that aims for one hundred percent.
Chef Dario Tornatore has established a culinary philosophy focused on capturing the true essence of each ingredient. His dishes tell a story, weaving international inspirations with local produce into a harmonious fusion of taste and art. The result is a symphony of flavours between European tradition and Mediterranean taste – a modern cuisine that respects the classics while exploring new territory. This approach earned the restaurant its Michelin Recommended recognition, a nod to the consistency and personality of the kitchen.
