The story
In the rolling hills of the Langhe, just outside Verduno, La Sbornia a Verduno is a restaurant that wears its name—"the binge"—with a wink. But as the team explains, it’s more than a name: it tells a story that can be tasted, savoured, and experienced in spaces that are not just a frame, but part of the picture. This philosophy has earned the restaurant a Michelin Recommended distinction, a nod to its confident, characterful cooking.
The restaurant describes itself as having two faces, two souls that attract one another. It calls these opposites "Antipodi"—points that are diametrically opposed, yet united. On one side, a menu rooted in Piedmontese tradition; on the other, a more contemporary, creative approach. The dining room itself mirrors this duality, composed of multiple rooms, each with its own atmosphere, yet all part of a single, convivial whole.
The kitchen draws on a journey that began in Puglia and passed through London, Tuscany, and Liguria before settling in Verduno. The result is a cuisine that respects local ingredients—like Fassona beef, Nocciole Piemonte IGP, and the region’s famed truffles—while bringing a lightness and precision that feels fresh. On the "Tradizione" tasting menu, you might find a battuta of Fassona with hazelnuts and Parmigiano foam, or plin (stuffed pasta) with three roasts, mantecato with butter and sage. The "Antipodi" menu ventures further, with dishes like crispy red mullet with panko, romesco, and a light bagna cauda, or a strawberry mousse with its own sorbet and vanilla panna cotta.
The wine list is a love letter to the Langa, anchored by Nebbiolo and the local Pelaverga—a pale, peppery, and fragrant red that the restaurant describes as "aphrodisiac, drinkable, and delicate." It also reaches beyond the Monviso horizon to include Champagne, Franciacorta, and bottles from across Italy and Europe. For a more relaxed moment, the "Menù a Bollitore Spento" (cold stove menu) and an aperitivo service from 17:30 to 19:30 offer a lighter, more spontaneous way to enjoy the house’s hospitality.
La Sbornia a Verduno is a place of many rooms and many moods, but one identity: strong, centred on conviviality, with the single goal of making every guest feel at home.
