The story
Set along the hillside road between Cellatica and Collebeato, just outside Brescia, Ristorante Carlo Magno occupies a 16th-century villa surrounded by lush greenery. The name itself carries history, and the atmosphere is one of quiet elegance. Inside, several intimate dining rooms offer distinct moods: the Sala Belvedere with its classic architecture and panoramic views over the city, the cosy two-person Ermengarda room for romantic dinners, and the stone-walled Sala Napoleon, perfect for private gatherings. For larger events, the Salone degli Arcieri and the Salone delle Feste – both converted from the original barn – blend rustic charm with refined comfort.
Chef and patron Beppe Maffioli has been at the helm since 1994. His cooking is rooted in the rhythms of nature, a philosophy he expresses in the words: “Nei miei piatti cerco di restituire le emozioni che vivo e l’attenzione verso ciò che ci dona la natura con i suoi ritmi.” His menus change with the seasons, featuring dishes such as a risotto mantecato alla crema di zucca with a hint of orange and sardine crumb, or a delicate risotto al cavolo viola, carote e radici di prezzemolo. The kitchen also earned recognition for junior chef Giorgia Ceccato, who was named best junior chef of 2022 by the Italian Federation of Chefs.
The restaurant’s consistent quality has been recognised by the Michelin guide, which awards it a Recommended status – a mark of its refined Mediterranean cuisine and attentive service. The wine list is extensive, chosen with care to complement each dish. In warmer months, dining moves outdoors to the Giardino dei Platani or the Corte di Re Desiderio, where the garden becomes a backdrop for aperitifs, barbecues, and the popular Magno Hour.
