Chef Arianna Gatti spent years cooking in some of Italy’s most respected kitchens before making her own vision a reality. At Forme, she brings “sostanza, concretezza, sapore” – substance, concreteness, flavour – to every plate. Her cooking is rooted in Italian tradition but expressed in a contemporary language, what the restaurant calls “e-stasi del tempo”: a fusion of time and taste that unites heritage with a modern sensibility.
The menu follows the rhythms of nature, changing with the seasons. It is a cuisine that aims to give substance back to Italian contemporary cooking, letting the pleasure of flavour and the richness of tradition take centre stage. Ingredients are sourced from small local producers, chosen for their excellence. The wine list is curated to match the menu, with labels from across Italy and the world, and the team helps guests find the perfect pairing for each dish.
This approach has earned Forme a Michelin Recommended distinction, a recognition of the precision and soul in Gatti’s work.
The restaurant is open for lunch and dinner from Wednesday to Sunday, with a private parking lot reserved for guests. A more informal sibling, Sottoforme Bistrot, offers a relaxed lunch option during the week.
