The story
Since 2016, Il Colmetto has been a working farm in Rodengo Saiano, just outside Brescia. On thirty hectares, the team raises over 150 Saanen goats for milk, which they transform directly on site into fresh and aged cheeses, yogurts, and budini in their own small dairy. Romagnolo donkeys roam the open pastures, and fruit and vegetables are grown in greenhouses and orchards – all with the goal of making the restaurant’s kitchen increasingly self-sufficient.
The restaurant itself is an agriturismo by definition, but the experience is that of a refined, contemporary space. The cuisine is firmly rooted in the farm’s output, with a strong preference for vegetables and a philosophy of whole-ingredient use that minimises waste. Every element on the plate is treated with care, reflecting a deep respect for the produce.
This commitment to sustainability and seasonality has earned Il Colmetto a Michelin Recommended distinction. The dining room, welcoming and modern, is the setting for a menu that changes with the rhythms of the farm. Meals are served at lunch and dinner from Wednesday to Saturday, and on Sunday for lunch only. Periodically, the team organises special events and convivial dinners outdoors on the farm’s green grounds.
Il Colmetto is a place where the line between farm and table is intentionally blurred, offering a taste of modern cuisine that is honest, comfortable, and entirely local.
