The story
For more than two and a half centuries, the Gavazzi family has run Al Gambero in Calvisano. What began as an inn with stables, serving the hearty, flavourful dishes of the Brescian tradition, has evolved into a destination for refined Lombardian cuisine. The restaurant’s deep roots in the community are still felt today, with older locals recalling meals shared around the open hearth.
Today, the kitchen is led by Antonio Gavazzi, known as Gino, with his mother still at the stove and his wife by his side. Their cooking follows a clear path: embracing traditional recipes while giving them a new soul and an original touch. The menu changes seasonally, featuring both meat and fish dishes depending on market availability. This dedication to quality and heritage earned Al Gambero a Michelin star, a recognition of its high-quality cooking that honours the past while looking forward.
