The kitchen organises its thinking around four elemental forces. Water is the origin point — the sea, without which none of this would exist. Earth grounds the cooking in the Veneto region, its produce and its traditions. Fire expresses itself through ancestral techniques, including smoke preservation that both transforms and protects. Air is the freedom to travel through scent and fragrance, the intangible layer that lifts a plate beyond the sum of its parts.

The result, in Cera's own words, is creativity expressed "senza artificiosità" — without artifice — in dishes that are at once deeply traditional and genuinely complex: real studies in flavour, fragrance and colour.

With the sea of nearby Chioggia, Far Eastern exotic influences, garden aromas, and homemade creations (baked goods, pastas, marinades, smoked items, and ferments), Cera continues along their exclusive path, defined entirely by invention and bold flavors. Head to Antica Osteria for a strikingly original menu, two tasting menus (Azzurro and Oppure) featuring around twenty courses each, and meticulously paired wines drawn from a stunning cellar. The offerings include canocia ceviche with a grilled oyster, aged amberjack and lacquered tiger prawn, blue crab soup, grilled scampi with sea truffle jus and radicchio kimchi, and grilled meagre served with a bone and champagne reduction, caviar, and clam broth.
