The story
Già Sotto l'Arco occupies a 1700s palace in the white town of Carovigno, Puglia. The restaurant calls itself a "shell of poetry" – a space that has been family-run since 1982. The atmosphere blends art, culture, and a deep-rooted passion for the region’s gastronomy.
The restaurant is the creation of Teresa Galeone and Teodosio Buongiorno. Chef Teresa Galeone leads the kitchen, crafting a "personal gastronomic magic" that sits at the intersection of tradition, creativity, and refinement. Her approach is instinctive, almost primordial, and firmly tied to the generous Puglian land. The Michelin Guide has recommended Già Sotto l'Arco since 2000, a recognition that speaks to the consistency of its modern Italian cuisine.
The kitchen operates with an ethical, religiously seasonal philosophy. The cooking is elegant without ornamentation, much like the chef herself. The menu changes with the seasons, highlighting the best local produce. Dishes such as burrata in kataifi pastry with green tomato sauce, or scented squid with chicken jus and bergamot, reflect this balance of creativity and tradition. The tasting menu is designed as a bespoke experience, with options of 4, 6, or 8 courses.
Teodosio Buongiorno personally curates a cellar of over 500 labels, with a particular focus on Puglian wineries.
