The story
In 1983, Gianni and Giusi Fontana left the city to return to Corte de’ Cortesi, taking over a bar that had been active since 1913. They transformed it into a trattoria that quickly became a local landmark for genuine cooking. Today, the restaurant is recognised as an Attività Storica di Regione Lombardia and is run by the next generation: Andrea, Elena, and Stefania. Chef Elena Stetco leads the kitchen, while Andrea curates a wine list of over 200 Italian labels, and Stefania orchestrates catering and events. Together, they preserve the same philosophy: welcome with warmth, cook with care, and tell the story of the territory with authenticity.
Goose is the star at Gabbiano 1983. The menu, deeply rooted in Lombardian tradition, offers goose in many forms: from a tasting menu called “Il Battesimo dell’Oca” to dishes like petto d’oca marinato agli aromi with citrus sauce and Avezzano potatoes, or coscia d’oca a 75° with polenta. The kitchen draws on the recipes of the nonne, updated with a light, contemporary touch. Ingredients are sourced with care: poultry from the Brescian plains, beef from Razza Bianca Val Padana (just 7 km away), vegetables from their own garden, and Slow Food presidia. The result is cooking that is sincere, recognisable, and deeply satisfying.
The Michelin inspectors awarded Gabbiano 1983 a Bib Gourmand for its good quality, good value cooking. This recognition fits naturally with the restaurant’s ethos: honest flavours, generous portions, and a welcoming atmosphere that makes every guest feel at home. The four dining rooms, each with its own character, invite you to linger over a meal that is both unpretentious and memorable. The wine list, personally selected by Andrea, is a journey through Italian vineyards, with bottles that speak the language of the land — perfect companions to Elena’s cooking.
