The story
In the heart of Casteggio, a baroque portal opens onto a courtyard where geometry meets history: the Certosa Cantù, an 18th-century monastery, now houses Hosteria La Cave Cantù. The setting alone—vaulted ceilings, stone walls, a well with a baroque cupola—sets the stage for a meal that feels both rooted and inventive.
Chef Damiano Dorati leads the kitchen with a clear focus on the Oltrepò Pavese, the wine-rich territory where he was born. His approach balances respect for tradition with a personal, playful touch. Quality ingredients, sourced locally and from across Italy and the world, are treated with seasonal sensitivity. The result is modern Italian cuisine that speaks of the land without being bound by it.
The Michelin inspectors have taken note, awarding Hosteria La Cave Cantù a Recommended distinction—a recognition of Dorati's ability to transform local products into something surprising.
The menu changes with the seasons but always offers a choice between a degustation path (six courses, dessert included, €85) and à la carte. Standout dishes from the current carte include "Pancia di Vitellone e l'orto accanto"—a veal belly with vegetable gastrique, umeboshi, and yuzu, which won the Premio Emergente Chef—and "Crudo La Cave Cantù 2015," a selection of raw fish and shellfish lightly vaporized with Sardinian seawater. The pasta section features a Carnaroli risotto with squid, loquat, and cuttlefish ink, and a tortello of lamb with porcini jus and raspberry tea.
Even the breads and petits fours are part of the experience, included in the degustation menu. The wine list, as one might expect in Oltrepò Pavese, is deep in local bottles, with a particular strength in metodo classico sparklers.
Dinner service runs from 20:00 to 22:00, Monday and Wednesday through Sunday; the restaurant is closed on Tuesdays and for a short winter break in late February. Reservations are essential.
Hosteria La Cave Cantù is a place where history and contemporary cooking meet without fuss. The setting is grand but the welcome is warm, the cooking precise yet unpretentious. For anyone seeking a genuine taste of modern Italian cuisine in a setting that tells a story, this is a destination worth seeking out.
