Chef and co-owner Paolo Gramaglia brings an unusual precision to the kitchen, shaped by a background in mathematics. He took the helm of President in 2006 and earned a Michelin star in 2015, a recognition the restaurant has held since. His cooking draws on Italian gastronomic culture and the ancient history of Pompeii, reinterpreting tradition with creativity and a modern vision. Research, identity, and innovation come together in dishes that showcase the products of Campania.
Laila Buondonno, lawyer turned sommelier, manages the dining room and co-owns the restaurant alongside Gramaglia. She curates a comprehensive, evolving wine list and leads a young, close-knit team that prioritises listening and empathy. The service aims to make each guest feel unique, from the first moment to the last.
President has held a Michelin star since 2015, recognised for high-quality cooking that turns Mediterranean ingredients into memorable plates. The star is not treated as a static achievement but as part of a continuous evolution – one that blends rigour, passion, and the living history of Pompeii.
