This Michelin-starred restaurant, part of the Il San Pietro hotel, is the domain of chef Alois, whose cooking is built on purity, harmony, and refinement. His contemporary presentations remain rooted in tradition—a balance that earned the restaurant its star.
The kitchen team of 32 works with ingredients sourced almost entirely from the hotel’s own organic gardens or from local growers and suppliers. The result is a cuisine that is both precise and deeply connected to the Amalfi Coast’s landscape.
The wine list, curated by sommelier Salvatore Marrone, spans over 600 labels. Marrone’s focus on small producers means you’ll find discoveries alongside classics, all chosen to complement the contemporary Mediterranean dishes.
Zass also serves breakfast, and it is an event in itself. The buffet celebrates Italian flavors: fresh mozzarella, ricotta, regional cheeses, creamy local yogurts, seasonal fruit, and vegetables picked that morning from the hotel’s garden. But the heart of the meal is the bakery. Bakers arrive at 4:00 a.m. to produce croissants, rustic loaves, delicate cakes, and pastries still warm from the oven. A special line of healthy breads uses ancient legumes and organic grains grown on the hotel’s estate in Norcia. For low-carb diets, keto breads made entirely from seeds and nuts offer a protein-rich alternative.
The dress code is elegant but informal: long trousers for men, collared shirts, no shorts or sneakers. The setting—open to the sea breeze and the light of the coast—matches the food: precise, generous, and unmistakably Mediterranean.
